Sirloin, ribeye or fillet?

Sirloin / striploin is known in Czech as nízký roštěnec, ribeye as vysoký roštěnec and fillet / tenderloin as svíčková. These names help you match familiar cuts to the English product pages.

Japanese A5 Wagyu is rich in intramuscular fat and is often enjoyed in small tasting portions. Fillet emphasises tenderness, ribeye generous marbling, and sirloin a balance of texture and flavour.

For larger steaks, grilling or more conventional restaurant portions, explore our Australian Wagyu and US Prime beef. The Japanese A5 grading system does not apply to these ranges.

Japanese A5 Wagyu, Kobe and traceability

In Japanese grading, the letter A identifies the carcass yield class and the number 5 the highest meat quality grade. Assessment includes marbling, colour, texture and fat quality.

Miyazaki and Kagoshima are Japanese origins. Kobe is a specific designation within Japanese Wagyu, with its own requirements. A5 Wagyu from Miyazaki or Kagoshima is therefore not automatically Kobe beef.

Before ordering, ask for the available batch documentation and Japanese cattle identification number if you want to check traceability. The ten-digit number can be searched in the official Japanese NLBC database. That record describes the animal; it does not by itself prove the A5 grade or Kobe designation.

Preparing A5 Wagyu at home

Thaw frozen meat in the refrigerator according to the pack instructions. Dry the surface before cooking and prepare small tasting portions. Richly marbled Japanese Wagyu does not need a heavy marinade or strong sauce.

Cook in small batches on a hot pan and season simply. Serve with vegetables, mushrooms or rice so the flavour of the beef remains central. Always follow the product storage and handling instructions.
