Who it’s for

This cut is for Wagyu connoisseurs and fine-dining enthusiasts who want the perfect balance between intense marbling and meaty character — restaurant chefs building premium tasting menus, experienced steak lovers graduating from Australian Wagyu, gift-buyers seeking one of Japan's most celebrated beef regions, and home cooks hosting special occasions. Miyazaki Sirloin is particularly suited for those who find pure fillet too lean and ribeye too rich — sirloin delivers the ideal middle ground with structured bite and full Wagyu flavor.

Key features

  • Cut: Sirloin (striploin) — the prime-time steak cut with balanced marbling and beefy texture
  • Weight: sold per kilogram, minimum order 1 kg
  • Price: €198.75/kg (regular €265/kg, currently -25%)
  • Breed: Japanese Black (Kuroge Washu) — one of only four approved Wagyu breeds

Unique differentiators

Miyazaki Wagyu is one of the most decorated Wagyu regions in Japan — it has won the Wagyu Olympics (All-Japan Wagyu Ability Expo) three times consecutively (2007, 2012, 2017), an achievement no other prefecture has matched. This is Japan's officially certified top Wagyu region, chosen by a panel of 500+ expert judges evaluating marbling, color, texture, and flavor.

What makes this specific cut special: - Sirloin is the cut Japanese chefs typically serve as the "headline steak" in Wagyu tasting menus — more expressive than fillet, more refined than ribeye - BMS 10+ Miyazaki sirloin carries the legendary buttery melt while retaining the beef character that fillet cuts can lose - Every Miyazaki A5 animal is traceable through Japan's nose-print ID registry, with certified documentation included - Unlike most European retailers, we ship DHL next-day — arriving within 24-48 hours across the EU - Currently 25% off regular price — one of the best value-per-quality ratios for Japanese A5 in Europe right now

Why this product

If you want one cut to understand what makes Japanese A5 Wagyu world-famous, Miyazaki Sirloin is the definitive choice. The region has been voted #1 Wagyu three times — something not even Kobe or Matsusaka have achieved in recent history.

Compared to Hida, Miyazaki is more buttery and richer; compared to Kobe, it's more affordable while delivering the same A5 grade; compared to Australian Wagyu, the difference in marbling and melt-texture is immediately obvious.

At €198.75/kg with the current 25% discount, this is exceptional value — below the usual €310+/kg for comparable Japanese A5 cuts. For a dinner party of 8-10 people, one kilogram is enough for an unforgettable main course.

For home cooking, sirloin is forgiving: high heat, short contact time, let the fat do the work. No sous-vide or complex prep needed.

FAQ

Q: What makes Miyazaki Wagyu different from Kobe Wagyu? A: Both are A5 Japanese Wagyu from the Kuroge Washu breed. Kobe comes from Hyogo Prefecture; Miyazaki from Kyushu island. Miyazaki has won the Wagyu Olympics three times, making it officially one of Japan's top regions by competitive evaluation. Miyazaki typically has a slightly sweeter, more buttery flavor profile than Kobe, while costing less for the same grade.

Q: What's the difference between sirloin and fillet? A: Fillet (tenderloin) is the leanest, most tender cut with mild flavor. Sirloin (striploin) has more marbling, firmer bite, and stronger beef character. For A5 Wagyu, sirloin is often preferred because the cut's natural structure holds up to the intense fat content better than fillet, creating a more balanced eating experience.

Q: How should I cook A5 Wagyu Sirloin at home? A: Keep it simple. Bring to room temperature 30 minutes before cooking. Season lightly with salt. Use a hot, dry cast-iron pan or grill — no oil needed (the fat will render). Sear 60-90 seconds per side for a 2cm thick slice. Rest 3-5 minutes. Slice thin against the grain. Do not cook past medium-rare — the marbling melts at body temperature, and overcooking destroys the texture.

Q: How much should I order per person? A: 100-120g per person as a main course, 60-80g as part of a tasting flight. A 1 kg order serves 8-10 as a main dish, or 12-15 as tasting portions.

Q: Is this shipped fresh or frozen? A: This product is shipped frozen, vacuum-packed, with DHL Express next-day. Depending on transit time it may arrive partially thawed, but the cold chain is maintained throughout. You can either thaw completely in the fridge and consume within the best-before date, or place directly in your freezer at -18°C for up to 2 more months.

Q: Does it come with certification? A: Yes — every shipment includes Japanese authenticity documentation with the individual cattle's nose-print ID, farm of origin, and A5 grading certification.

Q: Why is it 25% off right now? A: This is part of our Barbecue Season 2026 promotion — genuine limited-time discount on select premium Wagyu. Regular price is €265/kg.

Q: Can I order less than 1 kg? A: Minimum order for this cut is 1 kg. For smaller portions, see our Australian Wagyu Sirloin BMS 5-6 (€90/kg) or Japanese A5 Wagyu Fillet cuts.

Q: How long does it keep? A: 4-5 days refrigerated in the vacuum pack after full thawing. Up to 2 additional months if stored frozen at -18°C upon arrival.
