Who it’s for

This cut is for refined steak lovers and Wagyu enthusiasts who want the ultimate expression of tenderness — chefs hosting intimate fine-dining experiences, couples celebrating anniversaries with restaurant-quality Wagyu at home, gift-buyers seeking a truly exceptional premium meat present, and experienced Wagyu fans comparing regional fillet character. Miyazaki Fillet is especially suited for those who prioritize texture over intensity — a fillet so tender you cut it with a spoon, elevated by the marbling of Japan's most decorated Wagyu region.

  • Cut: Fillet (tenderloin) — the most tender cut of the animal, virtually no connective tissue
  • Weight: sold per kilogram, minimum order 1 kg
  • Price: €232.50/kg (regular €310/kg, currently -25%)

Unique differentiators

Miyazaki Wagyu has been crowned #1 Wagyu three consecutive times at the All-Japan Wagyu Ability Expo (the "Wagyu Olympics") in 2007, 2012, and 2017 — a record unmatched by any other Japanese region, including Kobe and Matsusaka. Combined with the Prime Minister's Award of Excellence, Miyazaki holds Japan's top culinary honors for beef.

What makes this specific cut special: - Fillet is the most tender cut on the animal — combined with Miyazaki's award-winning marbling, you get both the texture of the softest beef cut AND the full A5 marbling experience - Unlike ribeye or sirloin where the fat can dominate, Miyazaki A5 fillet delivers elegant, balanced richness — ideal for guests who find heavily marbled cuts overwhelming - Every animal is 100% purebred Kuroge Washu, traceable through Japan's national nose-print ID registry, with certified documentation included - Unlike most European retailers shipping Wagyu through multiple distributors, we ship DHL next-day directly from our Bucharest-based EU coldstore — arriving within 24-48 hours - Currently 25% off regular price (€310 → €232.50/kg) — exceptional value for Japanese A5 fillet from this calibre region

Why this product

If you want the most refined expression of Japanese A5 Wagyu — where tenderness meets marbling — Miyazaki Fillet is the definitive choice. No other region has won the Wagyu Olympics three times in a row, and fillet is the cut that rewards precision cooking with the most luxurious eating experience.

Compared to Hida Fillet (€310/kg), Miyazaki Fillet is currently 25% off at €232.50/kg — same premium region, better value. Compared to Miyazaki Ribeye or Sirloin, fillet delivers less marbling intensity but more tender texture — ideal if your guests prefer elegance over richness. Compared to Australian Wagyu Fillet, the difference in marbling quality and melt character is immediately visible.

For home cooking, fillet is the most forgiving cut to sear but the least forgiving to overcook — its lean nature makes timing critical. Treat it with respect: hot pan, 60 seconds per side for 2cm slices, rest 3 minutes, slice against the grain, finish with flake salt only.

For gifting or special occasions, Miyazaki Fillet is the ideal "show piece" — recognizable regional brand, A5 certification documentation, and the tender texture that even non-steak-lovers appreciate.

FAQ

Q: What's the difference between Miyazaki Fillet and Miyazaki Ribeye? A: Both come from the same A5 Miyazaki Wagyu cattle. Fillet (tenderloin) is the leanest, most tender cut with mild flavor — it melts in your mouth due to the tenderness of the muscle itself. Ribeye has much more intramuscular fat (marbling) and stronger beef flavor. Fillet is preferred by those who prioritize texture; ribeye by those who want intensity. Both are exceptional — they're different experiences of the same region's Wagyu.

Q: How does Miyazaki Fillet compare to Hida Fillet? A: Both are A5 Japanese Wagyu fillets from top Japanese regions. Hida comes from mountainous Gifu Prefecture (cleaner, firmer profile); Miyazaki comes from Kyushu island (sweeter, buttery profile). Miyazaki has won more Wagyu Olympics championships, while Hida has strong regional reputation among Japanese chefs. Currently Miyazaki is 25% off — making it exceptional value compared to Hida at €310/kg.

Q: How should I cook A5 Wagyu Fillet at home? A: Precision matters. Bring to room temperature 30 minutes before cooking. Season lightly with salt only. Cut into 2-3cm thick slices. Use a hot, dry cast-iron pan — no oil needed. Sear 60 seconds per side maximum (fillet is lean, overcooking destroys it). Rest 3 minutes. Slice against the grain. Finish with flake salt. Never cook past medium-rare.

Q: How much should I order per person? A: 100-120g per person as a main course, 60-80g as part of a tasting flight. Fillet is more portion-friendly than ribeye (less rich), so you can serve larger portions. A 1 kg order serves 8-10 as a main dish, or 12-15 as tasting portions.

Q: Is this shipped fresh or frozen? A: Shipped frozen, vacuum-packed, via DHL Express next-day. Depending on transit time it may arrive partially thawed, but the cold chain is maintained throughout. You can either thaw completely in the fridge and consume within the best-before date, or place directly in your freezer at -18°C for up to 2 additional months.

Q: Does it come with certification? A: Yes — every shipment includes Japanese authenticity documentation with the individual cattle's nose-print ID, farm of origin, and A5 grading certification. This confirms the meat is 100% purebred Kuroge Washu and Miyazaki-region verified.

Q: Why is it 25% off right now? A: This is part of our Barbecue Season 2026 promotion — genuine limited-time discount on select premium Wagyu. Regular price is €310/kg.

Q: Can I order less than 1 kg? A: Minimum order for this cut is 1 kg. For smaller portions, see our Australian Wagyu Fillet BMS 4-5 (€112.50/kg) as an alternative.

Q: How long does it keep? A: 4-5 days refrigerated in the vacuum pack after full thawing. Up to 2 additional months if stored frozen at -18°C upon arrival.

Q: Is Miyazaki really better than Kobe? A: By official Japanese Wagyu Olympics rankings — yes, Miyazaki has won the championship three times (2007, 2012, 2017), more than any other region including Kobe. In terms of eating quality at A5 grade with BMS 10+, both are exceptional. Miyazaki typically costs less for the same grade, making it excellent value.

WagyuBeef.eu DHL Express cold-chain delivery for frozen Wagyu beef across Europe

When we ship your order

Orders are usually shipped from Monday to Wednesday. This helps avoid unnecessary weekend delays and keeps frozen shipments moving through the DHL network as fast as possible.

Orders placed from Thursday to Sunday are usually prepared and shipped the following Monday. This schedule is used to protect product quality and reduce the risk of a frozen food shipment being delayed over the weekend.

Fast DHL Express delivery across Europe

Packages are transported from our cold-storage facility near Bucharest Airport to the DHL airport facility shortly before departure. In normal conditions, boxes are delivered to the DHL airport facility close to flight departure time, reducing unnecessary time outside controlled storage.

We usually ship with DHL Express. Most EU deliveries arrive within 24–48 hours after dispatch, depending on the destination country, DHL route, local delivery conditions and any exceptional logistics events.

After dispatch, you will receive a DHL tracking number so you can follow your shipment in real time. Because this is a frozen food shipment, please follow the tracking closely and make sure someone is available to receive the package on the delivery day.

How we keep your Wagyu cold in transit

Each shipment is packed in an insulated box with frozen thermo gel packs and dry ice. Dry ice has a temperature of approximately −79 °C and helps maintain very low temperatures during transit.

Our packaging is designed to protect the cold chain for up to 96 hours under normal shipping conditions. This gives the shipment a safety margin in case of normal transit variations.

Important dry ice safety warning: do not touch dry ice with bare hands. Dry ice is extremely cold and can cause cold burns. Do not place dry ice directly on skin, in your mouth, near children or near pets. Let any remaining dry ice evaporate naturally in a well-ventilated area.

Delivery guarantee: you do not risk your order

When you order from WagyuBeef.eu, you do not take the risk for shipping problems caused by transit delays, logistics issues or cold-chain failure during delivery. We guarantee that your order reaches you in proper condition.

If a shipment is delayed by the carrier or arrives compromised because of a logistics issue that is not your fault, WagyuBeef.eu takes responsibility. Depending on the situation, we will send the order again or offer a suitable solution.

The only exceptions are situations outside our responsibility or caused by the recipient, such as an incorrect delivery address, wrong phone number, recipient unavailable at delivery, failure to answer DHL, refusal of delivery, delivery rescheduling requested by the customer, or any other situation where DHL tries to deliver but cannot complete the delivery because of the recipient.

Our goal is simple: customers should feel safe ordering premium frozen Wagyu beef online. If you notice any delivery problem, contact us immediately so we can help.

Frozen, thawed & food safety

Our products are shipped frozen. Depending on outside temperature, transit time, destination country and the size or thickness of the cut, the product may arrive fully frozen, partially frozen, slightly thawed on the surface or fully thawed but still cold.

This does not automatically mean that the product is unsafe. The shipment is packed to protect the cold chain, and meat that arrives cold can usually be safely consumed according to the best-before date printed on the label.

Legal notice: for legal and labelling reasons, frozen meat shipped internationally may be declared as “thawed” even if it arrives still frozen or only partially thawed. This notice helps customers understand the correct storage and consumption instructions after delivery.

What to do when your order arrives

Option 1 — Enjoy soon:
Place the product in the refrigerator at approximately 0–5 °C and allow it to thaw completely. Once thawed, keep it refrigerated and consume it before the best-before date printed on the label.

Option 2 — Store for later:
If the product is still frozen or only slightly thawed on the surface when it arrives, you can place it directly in your freezer at −18 °C. In this condition, it can usually be stored for up to 2 additional months without loss of quality.

Important: if the product is fully thawed, do not refreeze it. Keep it refrigerated and consume it according to the best-before date on the label.
