Unique differentiators

Kagoshima is the biggest Wagyu region in Japan by volume, producing roughly 20% of all Japanese Wagyu — more than any other prefecture. Located on the southern tip of Kyushu island, Kagoshima benefits from a warm subtropical climate, volcanic soil, and centuries of refined Wagyu breeding tradition. At the 2017 All-Japan Wagyu Ability Expo (the "Wagyu Olympics"), a Kagoshima cow won the individual cattle championship, cementing the region's reputation for top-tier quality alongside its massive production volume.

What makes this specific cut special: - Sirloin is the cut Japanese chefs typically serve as the "headline steak" in Wagyu tasting menus — more expressive than fillet, more structured than ribeye - Kagoshima's signature flavor profile is sweeter and smoother than other top Wagyu regions, with a long umami finish that works particularly well with the sirloin's natural beef character - BMS 10+ marbling combined with the cut's inherent structure delivers both melt-in-mouth texture and satisfying bite - Every animal is 100% purebred Kuroge Washu, traceable through Japan's national nose-print ID registry, with certified documentation included - We ship DHL next-day directly from our Bucharest-based EU coldstore — arriving within 24-48 hours across all 29 EU countries we deliver to

Why this product

Kagoshima delivers authentic Japanese A5 Wagyu with a distinct regional character that's less marketed internationally than Kobe but equally certified. For Wagyu enthusiasts building a regional tasting experience, Kagoshima Sirloin is essential — the southern Kyushu profile complements Miyazaki (neighboring prefecture) and contrasts with Hida (mountainous Gifu) or Kobe (coastal Hyogo).

Compared to Ribeye, sirloin offers less marbling intensity but more beef-forward character — ideal for guests who find ribeye too rich. Compared to Fillet, sirloin has more complex flavor with stronger structure. Compared to Australian Wagyu sirloin, the difference in marbling refinement and melt-texture at A5 grade is immediately visible.

For home cooking, sirloin is forgiving: high heat, short contact time, let the marbling render. The structured cut holds its shape better than ribeye and doesn't demand the precision timing that fillet requires. A 1 kg order serves a dinner party of 8-10 as an unforgettable main course.

For gifting, Kagoshima sirloin is a discovery piece — recipients familiar with Kobe or "generic Japanese Wagyu" often haven't tried Kagoshima specifi

FAQ

Q: Where is Kagoshima and what makes its Wagyu special? A: Kagoshima Prefecture is on the southern tip of Kyushu island — Japan's warm, volcanic southern region. It's the largest Wagyu-producing prefecture in Japan, responsible for about 20% of all Japanese Wagyu. The warm climate, volcanic soil, and centuries of refined breeding create Wagyu with a sweet, smooth umami profile and excellent marbling consistency.

Q: Is Kagoshima Wagyu as good as Kobe? A: By A5 grade standards — yes, both meet the same highest tier of Japanese Wagyu certification. Kobe is more internationally famous (marketing), while Kagoshima has historically been Japan's volume leader with equally strict quality standards. Both use purebred Kuroge Washu cattle. Kagoshima cattle have won individual championship awards at the Wagyu Olympics. For eating quality at A5 with BMS 10+, the difference comes down to regional flavor character, not quality tier.

Q: How does Kagoshima Sirloin compare to Kagoshima Ribeye? A: Both come from the same A5 Kagoshima Wagyu cattle. Sirloin (striploin) has moderate marbling and structured, beef-forward character — the balanced middle ground. Ribeye has more intramuscular fat and richer, more intense flavor. Sirloin is preferred when you want the cut to taste like beef first and Wagyu second; ribeye when you want maximum marbling indulgence. Both are exceptional expressions of Kagoshima's regional profile.

Q: What's the difference between sirloin and fillet? A: Fillet (tenderloin) is the leanest, most tender cut with mild flavor. Sirloin (striploin) has more marbling, firmer bite, and stronger beef character. For A5 Wagyu, sirloin is often preferred because the cut's natural structure holds up to the intense fat content better than fillet, creating a more balanced eating experience.

Q: How should I cook A5 Wagyu Sirloin at home? A: Keep it simple. Bring to room temperature 30 minutes before cooking. Season lightly with salt only. Use a hot, dry cast-iron pan or grill — no oil needed (the fat will render). Sear 60-90 seconds per side for a 2cm thick slice. Rest 3-5 minutes. Slice thin against the grain. Do not cook past medium-rare — the marbling melts at body temperature, and overcooking destroys the texture.

Q: How much should I order per person? A: 100-120g per person as a main course, 60-80g as part of a tasting flight. A 1 kg order serves 8-10 as a main dish, or 12-15 as tasting portions.

Q: Is this shipped fresh or frozen? A: This product is shipped frozen, vacuum-packed, via DHL Express next-day. Depending on transit time it may arrive partially thawed, but the cold chain is maintained throughout. You can either thaw completely in the fridge and consume within the best-before date, or place directly in your freezer at -18°C for up to 2 more months.

Q: Does it come with certification? A: Yes — every shipment includes Japanese authenticity documentation with the individual cattle's nose-print ID, farm of origin, and A5 grading certification. This confirms the meat is 100% purebred Kuroge Washu and Kagoshima-region verified.

Q: Can I order less than 1 kg? A: Minimum order for this cut is 1 kg. For smaller portions, see our Australian Wagyu Sirloin BMS 5-6 as an alternative.

Q: How long does it keep? A: 4-5 days refrigerated in the vacuum pack after full thawing. Up to 2 additional months if stored frozen at -18°C upon arrival.
