Unique differentiators

Hida Wagyu is less internationally famous than Kobe or Matsusaka, but among Japanese chefs it's considered one of the most balanced A5 Wagyu regions. The cooler mountain climate of Gifu Prefecture produces cattle with finer marbling texture and a cleaner, less buttery finish compared to coastal regions — ideal for those who find other A5 Wagyus overwhelming. Every Hida A5 animal is traceable to a registered farm through Japan's nose-print ID system.

What makes this specific cut special: - Sirloin is the cut Japanese chefs typically serve as the "headline steak" in Wagyu tasting menus — more expressive than fillet, more structured than ribeye - Hida's mountain-region character gives the sirloin a cleaner umami profile and firmer bite than richer coastal Wagyu — long finish, balanced fat distribution, never overwhelming - Unlike typical supermarket Wagyu (Japanese-crossed Australian), this is 100% purebred Kuroge Washu with full Japanese certification and nose-print ID traceability - We ship DHL next-day directly from our Bucharest-based EU coldstore — arriving within 24-48 hours across all 29 EU countries we deliver to - Certificate of authenticity with farm-of-origin documentation included in every order

Why this product

If you want one Japanese A5 cut that demonstrates both marbling and meat character equally, Hida Sirloin is the ideal choice. Sirloin sits between fillet's refined tenderness and ribeye's rich indulgence — and Hida's clean regional profile brings this middle-ground cut even more into balance.

Compared to Miyazaki Sirloin (Kyushu), Hida is firmer and cleaner — less buttery-rich, more bright-umami. Compared to Kagoshima Sirloin (southern Kyushu), Hida has more structure and less sweetness. Compared to Kobe Sirloin, Hida offers the same A5 grade and purebred lineage at a more accessible price point — without compromising eating quality.

For dinner parties, Hida Sirloin is the educational choice that impresses without overwhelming — guests who've had "Wagyu" before often haven't specifically had Hida, making every meal a conversation-starter.

For home cooking, sirloin is forgiving: the structured cut holds its shape better than ribeye and doesn't demand the precision timing that fillet requires. High heat, short contact time, let the marbling render — that's it.

FAQ

Q: What makes Hida Wagyu different from Kobe Wagyu? A: Both are A5 Japanese Wagyu from the Kuroge Washu breed, both with strict regional certification. Kobe comes from Hyogo Prefecture (coastal); Hida from Gifu Prefecture (mountainous). Kobe is marketed more heavily internationally and carries a premium price tag. Hida is less globally famous but highly regarded among Japanese chefs for its cleaner, more balanced flavor profile. Hida typically costs less than Kobe for the same A5 grade.

Q: How does Hida Sirloin compare to Hida Ribeye? A: Both come from the same A5 Hida cattle. Sirloin has moderate marbling with structured, beef-forward character — the balanced middle ground between fillet and ribeye. Ribeye has much more intramuscular fat and richer, more intense flavor. Sirloin is preferred when you want the cut to taste like beef first and Wagyu second; ribeye when you want maximum marbling indulgence.

Q: What's the difference between sirloin and fillet? A: Fillet (tenderloin) is the leanest, most tender cut with mild flavor. Sirloin (striploin) has more marbling, firmer bite, and stronger beef character. For A5 Wagyu, sirloin is often preferred because the cut's natural structure holds up to the intense fat content better than fillet, creating a more balanced eating experience.

Q: How does Hida compare to Miyazaki or Kagoshima? A: All three are premium Japanese A5 Wagyu regions. Hida (Gifu Prefecture, central mountains) — cleaner, firmer, more balanced umami. Miyazaki (Kyushu, southern Japan) — buttery, rich, three-time Wagyu Olympics champion. Kagoshima (Kyushu, southern tip) — sweet, smooth umami, Japan's largest producer. Each has distinctive character. For a complete Wagyu tasting experience, having one sirloin from each region is ideal.

Q: How should I cook A5 Wagyu Sirloin at home? A: Keep it simple. Bring to room temperature 30 minutes before cooking. Season lightly with salt only. Use a hot, dry cast-iron pan or grill — no oil needed (the fat will render). Sear 60-90 seconds per side for a 2cm thick slice. Rest 3-5 minutes. Slice thin against the grain. Do not cook past medium-rare — the marbling melts at body temperature, and overcooking destroys the texture.

Q: How much should I order per person? A: 100-120g per person as a main course, 60-80g as part of a tasting flight. A 1 kg order serves 8-10 as a main dish, or 12-15 as tasting portions.

Q: Is this shipped fresh or frozen? A: Shipped frozen, vacuum-packed, via DHL Express next-day. Depending on transit time it may arrive partially thawed, but the cold chain is maintained throughout. You can thaw completely in the fridge and consume within the best-before date, or place directly in your freezer at -18°C for up to 2 additional months.

Q: Does it come with certification? A: Yes — every shipment includes Japanese authenticity documentation with the individual cattle's nose-print ID, farm of origin, and A5 grading certification. This confirms the meat is 100% purebred Kuroge Washu and Hida-region verified.

Q: Can I order less than 1 kg? A: Minimum order for this cut is 1 kg. For smaller portions, see our Australian Wagyu Sirloin BMS 5-6 as an alternative.

Q: How long does it keep? A: 4-5 days refrigerated in the vacuum pack after full thawing. Up to 2 additional months if stored frozen at -18°C upon arrival.
